Benzoic Acid and Sodium Benzoate have the functions of sterilizing and inhibiting bacterial growth and are low in toxicity and tasteless, so they are widely used as preservatives. In slightly acidic medium, only 0.1% Benzoic Acid can inhibit the growth of bacteria. Changing the pH value has a great influence on the bactericidal and bacteriostatic effects of benzoate, and its effect is obviously reduced in the reductive medium, and the best effect is obtained when the pH value is between 2.5 and 4.5.
